SCRATCH LEMONADE

"This is basic, no-fuss lemonade. The hardest part is juicing the lemons and limes. The small amount of lime juice rounds out the lemonade, making it for invigorating. Be sure to put the lemon rinds in the lemonade, because while you were juicing the lemons, you were also breaking loose some of the oils in the rinds, which have mountains of flavor."

6 cups cold water
1 1/2 to 2 cups granulated sugar, to taste
2 cups freshly squeezed lemon juice (from about 12 lemons), rinds reserved*
1/4 cup freshly squeezed lime juice (from about 2 limes)

In a 2 1/2-quart container, combine the water and sugar, stirring until the sugar is dissolved.

Add the lemon and lime juices, and stir once more. Throw in the lemon rinds.

Chill until very cold, and serve over ice.

*Wash the lemons before juicing.

Makes about 2 quarts
